FISH PACKETS HOT AND SPICEY
1 hour 20 minutes cook & prep time, preheat oven to 350 degrees
STEP ONE:
1 Bay leaf
½ t. Oregano
½ t. Basil
¼ t. Thyme
¼ t. Cayenne
¼ t. Paprika
¼ t. Salt
¼ t. White Pepper
¼ t. Black Pepper
2 T. Smart Balance Butter
½ Tomato, large, chopped
½ c. Red Onion, chopped
½ c. Bell Pepper, chopped
1 Garlic clove, large, minced
Preheat oven to 350 degrees. Combine seasonings in a small bowl and set aside. Melt the butter in a large saucepan over medium heat (gas mark 6). Add all ingredients, blend thoroughly, and sauté until vegetable soften.
STEP TWO:
½ c. Clam Juice
½ c. Chicken stock, low sodium, fat free
¾ c. Tomato sauce, no salt
1 T. Tomato paste, no salt
2. T. Red wine
2 t. Sugar, or Splenda
1 t. Tobasco Sauce
½ t. Worcestershire sauce
Add remaining ingredients to pan and bring to a boil over high flame. Turn flame to low and simmer 25 minutes.
STEP THREE:
3 T. Butter, Smart Balance
2 T. Flour, wheat
2 Cod fillets, 6 oz. each, (any kind of fish will be alright)
In a small frying pan over medium flame melt the butter then whisk in the Flour and continue cooking until mixture is medium brown in color (about 5 minutes). Whisk often.
Whisk flour mixture into the sauce and blend well. Lay two foil squares onto a cookie sheet. Spray PAM on foil (or brush with butter or olive oil) then ladle a little sauce on the foil. Lay the fish on top of the sauce and top with the rest of the sauce.
Fold the foil to make packets and bake on a cookie sheet or in a glass pan for 30 minutes. Lay the packets on dinner plates and fold back edges. Serve immediately. Good with rice and a veg.
